I haven't read The Bell Jar, but my wife has. It's widely recognised as important, but very depressing (it's about the author's depression; later, she suicided). Not one to read if you tend to get down.

The Bell Jar-sylvia plathThe grapes of Wrath-John SteinbeckI found the writing style very, very boring. It never really give me a sense of 'urgency' The characters were pretty well developed but, the situations where really rather.. boring..(disclaimer I still give it credit as a valuable piece of literature it was important in its time.. but, nowits just a relic.. almost like a toy thats lost its shine)The Red Badge of Courage- Stephan Crane Little more interesting.. Really made me wonder about what its like in a real war. You can definitely see the characters develop and grow.Its not a fun read but, I would prefer the red badge over grapes of wrath.. haven't read the rest.

"Where the heart is" and "A Walk to remember" are both good books, and easy reads. I haven't gotten around to reading any of the others but i've heard of a few of them and was told they're pretty good.

"Let Every Nation Know" It's by Robert Dallek and Terry Golway. They take JFK's most famous (and less famous) speeches and give you the backstory on them.
