Enzymes are protein, and any proteins are broken down to amino acids in digestion, so I don't think it matters what sort of proteins they are.
The high-protein vegan foods are pulses - peas and beans. It's quite possible to get easily enough protein for normal living with an ordinary vegan diet - I don't know about heavy bodybuilding. (It's vitamin B12 that's the real problem for vegans.) It's easy to look up protein compositions of various foods: here is a brief list.
