ok so... say i made some food the other day and refrigerated it. 3 days ago. and they say don't keep leftovers for more than 4 days. if i take it out of the fridge and heat the food up well in the micro, can i get a few extra days out of it???

They have a guideline for this in the latest cosmo magazine edition. It's different for different foods. I don't remember exactly. I'll have to look it up. Reading this just sparked my memory about it, so if you have the latest cosmo check that out.

Just warming it up in the microwave and re-cooling it shortens its life rather than lengthens it, because the warming won't kill all the bacteria, and after heating it it is standing around warm for some time, giving the bacteria left a good chance to grow. However, if it's raw and you cook it well, that should kill all the bacteria and give you some extra time.

well i heated it up pretty good in the microwave (6 min) and then i put it immediately in the fridge sealed up well. is it still going to shorten its life?

Heck, I've eaten things way past 3 days. Hey if it doesn't have green fuzz on it and hasn't really changed it's taste or smell... it's good to go! LOL

I know some people who don't save any leftovers. If it's not eaten that day, it's thrown out. People like that should be beaten with a big stick.

Yes and no. Six minutes should be provide enough heat to kill most of the active bacterial cells (not the spores though, so the food certainly isn't "sterile"). Keep in mind that the toxins produced by the bacteria that developed in the 3 day period will remain on your food (the toxins are what's likely to make you sick, even if you don't get an infection per se). Thus, the clock is restarted (you don't get another 4 days), but you'll probably get a couple of days out of it before the food makes you vomit. Good luck
