My dad runs the catering department on the ship he works on, so learnt to cook VERY young lol good thing really cuz my mum can't cook for shit lol
I mainly do main meals, but have a few deserts that I make from time to time... only problem is that you need a sack of sugar for most :laughing:

Really nice bloke, met him at a charity function about 4 years ago. The program to watch though is "River Cottage" with Hugh Fearnley-Whittingstall. I would soooooooo love to do what he's done :scream\_cat:
But then you can't beat a daily instalment of Ready Steady Cook lol and not Hells Kitchen is back, cooking has never been so good lol -

Some of the ones I have seem complex BUT I have great news for those of you who are less than the best in the kitchen, I'll let you know how to substitute some stuff! For right now though, I'm out. I have a date tonight! Oh and on the menu we had:baked bbq chickencorn twice baked potatosAnd for dessert a little bit of cheesecake only with strawberry liquor instead of bailey's. I'll give you guys the recipe for all of those when I get back tonight.

Bailey's Irish Cream Cheescake Crust 10 whole graham crakers, broken into pieces 1 1/4 C pecans1/4 C sugar6 T butterFilling1 1/2 lbs Cream cheese (about 2 1/2 packages of regular philly cream cheese..I usually add a little bit more just because...)1 C sugar3 large eggs1/3 C Bailey's Irish Cream (I used strawberry liquor tonight..it rocked!)1 t. vanilla3 oz white chocolate (the original recipe said broken into pieces...but i grated it..it has the same effect)Topping1 1/2 C sour cream (yes...sour cream!)1/4 C powdered sugar1 1/2 oz white chocolate grated (instead I tried a shave to make it curl..it looked prettier)24 pecan halvesCrust: Preheat oven to 325 F. Lightly butter 9in springform pan. Grind graham crackers, pecans, and sugar. Add butter in. Blend using on/off turns. Press crumbs onto bottom and 2 In up the sides of the pan. Refrigerate for 20 minutes.Filling: Beat cream chees and sugar in lart bowl until smooth. Whisk eggs, Bailey's, and vanilla in separate small bowl until just blended. Beat the egg mixture into the cream chees mixture. (You want to do it this way because the egg, liquor and vanilla are VERY runny of course..) Add grated chocolate to mixture. Bake approximately 50 minutes OR until the edges are puffy and look dry and the center has set.Topping: Mis sour cream and powdered sugar in small bowl. Spread to cooled cake. Refrigerate about 6 hours. Sprinkle grated or shaved chocolate over cake. Place pecans around edge.***As a side note that I didn't mention. Toast the pecans before you put them on the cheesecake. *** If you have questions about anything let me know.This one isn't so much difficult as it time consuming. It took me all day to make this darn thing.

All right my BBQ chicken is NOT difficult at all. On a scale of 1 - 10. 1 being the easiest. It's a negative 3.BBQ chickenOf course you need chicken. I use boneless, skinless chicken breast But whatever you use is fine. Preheat your oven to 450. Spread the chicken over the pan and dump bbq sauce all over it. Put it in the oven and there you go. Now..here's the only difficult part about it.As the chicken cooks there will be juices in the pain. Before it's completely done I'll drain that stuff off, flip the chicken over and pour more bbq sauce on it. I usually use a honey bbq so it's not super strong.Twice baked potatos6 medium potatossalt and pepper 1 pint sour cream1 cup cheedar 1/2 C buttter or margarineparmesan cheese and chives (optional)Bake the potatos first for about an hour at 350. When you pull them out be VERY careful and go ahead and slice them in half. You may want to let them cool for a bit after. Dig the potato away from the skin and into a bowl being very careful not to tear the skin (it takes practice..no one gets it the first time...) Mash the potatos until it appears there are no lumps. Mix in sour cream (you may want to use an electric mixer). Add salt and pepper to taste if you'd like (I say if you'd like because although the recipe calls for I don't use it). Then add the cheese (I substitute cheddar for colby and monterrey jack). Blend well. Then spoon the filling back into the potato skins (CAREFUL). Place back in the over at 325 (not 350) and bake for 30 minutes or until golden. Once they're finished you can sprink with parmesean and green onions.

Oh and Diver, i love the River cottage series, tho im not sure i would eat everything he cooked.
